Gooseberry Soup

 Gooseberries slowly going out of season now, so I took the opportunity and got a box of fresh berries to make one of my favourite summer dish. Cold soup.

It might sounds weird, but this soup is a very refreshing dish for the hot summer days (I’m eagerly waiting for this to happen).

You can substitute the gooseberries with other type of fruits, for eg. cherry, plum.

 Gooseberry Soup

Ingredients

  • 600g Gooseberry
  • 1L Water
  • 150g Demrara Sugar
  • 12 Cloves
  • Small stick of Cinnamon
  • Lemon Shavings of Half  Lemon
  • 1tsp Lemon Juice
  • 100g Sour Cream
  • 20g Plain Flour

Mix and boil the water with the sugar, spices, and the lemon shavings.  Add the whole berries after you’ve topped and tailed them. Keep boiling it until the berries soften.

Mix the flour with the sour cream and add some of the hot liquid from the pan. Mix it until it’s smooth, and add it slowly to the soup. Stir it continuously.

Boil it for another 5 minute, and leave it to cool down. Chill it in the fridge.

Serve it cold, preferably outside! 🙂
