Simple Apple Cake

Summer is over, and we’re getting closer to winter day-by-day beyond recovery. This week I had to turn my heating on!

Tragedy!

To tackle this, I’ve decided to bake an apple cake. There’s something magical about it when the scent of the cinnamon, apple and slowly caramelising sugar fills the warm air. Just sit back and enjoy the warm cake with a cuppa tea and a good book.

Pigeon breast with cherry-berry sauce, poppy seed crumble and sweet potato croquettes

In Winchester, UK we have every fortnight Sunday an excellent Farmers’ Market with local producers. Few weeks before I’ve spotted a decent game meat seller, which came handy when I’ve read this recipe. I’ve made it with croquettes instead of mash, and also left out the Thai basil.  Even so, with my friend we have managed to ate up all the  2 pair of breasts in one go with the croquettes.Pigeon Breast with CherryBerry sauce, poppy seed crumble and sweet potato croquettes

Blackberry and Damson Plum Conserve

Blackberry is finally in season in the UK. A bit late, but at least we have some to pick. With the help of my two friends we managed to pick quiet a substantial amount of it. I’ve also managed to get hold of some Damson plum, so I’ve arrange a marriage with the berries.

I didn’t want to use too much sugar (is bad for me), so I’ve added some extra pectin to make sure the jam will set properly. Also instead of caster sugar, I’ve used jam sugar with added pectin.
