Quick and easy fruit cake

I have learnt this recipe when I was living in a student halls of residency sharing a flat with 8 others. It’s a quick and easy to make crowd pleaser.
Ingredients
- 300g Plain flour
- 240g Golden caster sugar
- 4 Medium eggs (separate the yolks and whites)
- 20g Butter + for greasing
- 2 teaspoon Baking powder
- 100ml Milk
- 250g Pitted fruit (cherry, plum, etc)
- Icing sugar for dusting (optional)
Pre-heate the oven to 180°C. Separate the eggs and mix the egg yolks with the caster sugar and butter. Sift the flour and baking powder into the mix, add the milk and mix it well. You should get a smooth paste like texture.
Beat the egg white until it’s stiff.
Fold gently into the mixture, otherwise the cake won’t rise properly. Pour it into a greased 30x35cm oven dish. Bake it for 25-30 minutes on 180°C.
When it’s done, leave it to cool and cut it up into squares. Dust it with icing sugar.
