Courgette and Mushroom Stew Wrap

I have had lying around a couple of courgettes and a few tortilla wraps left over from the week which I had to use it up. Here it comes the veggie stew in wrap.
Courgette and Mushroom Stew Wrap



  • 1/2tsp Cummin Seeds
  • 3 medium size Onion
  • 2 cloves of Garlic
  • 1 tbsp Grounded Paprika
  • 2 Courgettes
  • 250g Chestnut Mushroom
  • 1 tbsp Marjoram
  • 250ml Vegetable stock
  • Tin of Chopped Tomatoes
  • Seasoning
  • 2tbsp Sour Cream
  • Tortilla Wrap
  • Preparation time: 15 minute
  • Cooling time: 40 minute
  • Serves: 3 person


This will may sound familiar. Heat up the oil in a sauce pan, or cassarole dish, and add the cummin seeds and the finely chopped onions. Sauté the onions, and when is softened, take off the heat, and add a tablespoon of grounded paprika (spice). Pour it up with a little water.

Add the diced courgettes, and sliced mushrooms, and cover it with the vegetable stock. Season with the marjoram and grounded black pepper, and leave it to simmer for 30 minute. Reduce the stew to a bit thicker as usual. We don’t want to soak the wrap.

When it’s ready fill the wrap with the stew. Top it with a spoonfull of sour cream and fold the wrap. Done!
