Aubergine Paste

My mum used to make this cheap and cheerful paste when I was a kid. It’s lovely to use it as a dip with pita bread or spread it on a toast.


  • 1 Aubergine
  • 1 Clove of Garlic
  • 6 Cherry Tomatoes
  • 1 dash of Lemon Juice
  • Salt, Pepper
  • Preparation time: 5 minute
  • Cooking time: 15 minute
  • Serves: 3 person

Chop up the aubergine, and salt both side of it. Leave it for 20 minute to sweat its juice out. Meanwhile slice up the garlic and half the cherry tomatoes.

Grill the aubergine slices on both sides on a very hot grill for approximately 5 minute each side. Don’t worry if it gets burnt a bit. Also grill the tomatoes side down.

Put the grilled ingredients in a food processor with the lemon juice and the garlic and blend it well. Season it as you like it. For a twist you can add some chilli to it as well. Serve it cool.
