Yoghurt Cake with Summer Berries

As the summery weather seems to hold up, I found myself craving for some Berries based desert, which doesn’t makes me feel like a sugar craving, calorie counting weight watcher.

Ingredients

 

  • 500g Natur or Flavoured Yoghurt
  • 25g Gelatine
  • 6 tbsp Caster Sugar
  • 1/2tsp Vanilla Extract
  • 600ml Single Cream
  • 1 Lemon’s Zest
  • 500g Mixed Summer Berries
  • Preparation time: 20 minute
  • Cooling time: approx. 3 hour
  • Serves: 6 person

I decided to make my favourite cake, Yoghurt Cake, which is not really a cake at all. I just call it that. This is a real no fuss to make dessert. For this I’m using my Tupperware Jel-Ring Mould.

Mix the yoghurt the vanilla extract, caster sugar and the gelatine in a sauce pan, and heat up gently. Do not boil it!

Take it off the heat, and mix in the lemon zest, the cream and the berries. Leave a 100g berries out if you want to make coulis with it. Also separate the bigger berries.

Dampen the mould, and put the bigger berries into the bottom of the mould, and pour over with the yoghurt mixture. Put the lid on, and put it in the fridge for a few hours to chill until it’s congealed.

You can serve it on its own or with coulis.
