Home made Pasta
Finally, I got my hands on an Imperia Lusso SP150 Pasta machine. Not the best choice for getting rid of excess weight, but I will use it with caution.
Ingredients
- 230g Plain Flour
- 2 Medium Eggs
- 1tbsp Olive Oil
- Pinch of Salt
Heap up the flour and make a well in the middle. Beat lightly the eggs and the olive oil with the pinch of salt. Pour it in the well, and slowly incorporate with the flour with a help of a fork.
Use your fingers when it gets more dense, until you get a smooth dough. Kneed it for a few minute and shape it to a ball. Wrap it in a cling film and put in the fridge for 30 minute.
After resting, dived the ball into two piece and with a roll pin roll it out for about 5mm thick.
Set your pasta machine to the widest setting, and roll it through couple of times. Fold it in half and repeat it 3 more times.
Gradually narrow the settings on the roller and keep stretching the dough to the thickness of your need.
Use it up immediately or leave it out to dry it by air and store it in air tight container in cool place.
