Kabi’s Pancake Batter

If you want to make a real pancake instead of using those ready-made mixes, here’s your chance to impress your friends and family. Pick the relevant group. 🙂

I promise it will be a piece of  (pan)cake to make. You only need (preferably) a flat frying pan and flamboyant attitude for the flipping, if you dare!

Pancake Batter

 Ingredients

for the Batter mix

  • 400g Plain Flour
  •  3tsp Sugar
  • 1tsp Salt
  • 500ml Milk
  • 430ml Sparkling Water or Soda Water
  •  4 Eggs
  •  Sunflower Oil

but you can use the followings;

jam, nutella, nuts,  cocoa powder and sugar mix, lemon juice and sugar mix, fruits with whipped cream on the top, caramelised fruits with ice cream and coulis, etc.

  •   Preparation time: 20 minute
  • Cooking time: 1-2 minute per Pancake
  • Makes: 20 pancakes

Get a nice big mixing bowl. Sift the flour and add the salt, and sugar. Make a well in the middle and add the eggs and the milk. Mix it well, and slowly add the sparkling water until it reach the consistency  of thicker single cream. Leave it to rest at least 20 minute.

Stir it up before you start to make them. Heat up the pan to very hot with some oil (it should smoke a bit) and make the first batch of the pancakes. Poor the mixture in the middle of the pan, and with circular motion of your wrist spread it evenly. The sides should start to curl up. With a spatula or a flat wooden spoon lift up the the pan cake after 30-45 seconds. You can flip it with the spatula or be cool as Tom Cruise in Cocktail and try to flip it with the frying pan. I can do both! (Cooool!) 🙂 Doing it either way, make sure you don’t burn them! If you got the rhythm, try it with two pans at the same time. 🙂

Eat the first one -that’s my rule anyway-, so you know if you need to add more liquid to the mixture. You can fill it, top it, or make a multi-layered pancake cake.
