Monday was never my favourite day of the week, but right now… couldn’t be further from the truth.
During the weekend I bought some smoked pancetta. Also my Sunday afternoon is devoted to baking bread for the coming up week.
I’ve made rye bread this week, what I have topped with butter, pancetta, Cornish blue cheese and chopped toasted pistachios.
Saltiness of the pancetta gives a great boost for the flavours from the blue cheese, and a toasted pistachios adding the crunchy texture and nuttiness nicely completes the dish. Accompanied by my 2006 Cabarnet Sauvignon Barrique from the Blum vineyard, Villany. Splendid!
