Salmon Fillet Baked on a Sea Salt Bed

I’ve successfully overdosed  on chocolate and eggs during Easter weekend, but spared the bunny.

I was craving for a light and simple dish to cook. I’ve found some nice salmon fillet in the shop which suited perfectly for a quick and delicious Wednesday evening supper.

 Salmon Fillet Baked on Sea Salt Bed

Ingredients

  • Salmon fillet
  • Sea Salt (enough to cover the bottom of a baking dish)
  • Olive Oil
  • Unsalted Butter
  • Fresh Thyme
  • Fresh Lime Juice
  • Few Cloves of Garlic (with skin on)
  • Sour Cream
  • Spring Onion
  • Coarsely Grounded Black Pepper
  • Preparation time: 5 minute
  • Baking time: 20 minute

Preheat the oven 200 ºC.

Grease the bottom of the baking dish with olive oil. Pour enough salt in the dish to cover the bottom. Place the fillet(s) skin side down on the sea salt.

Put on each fillet a small knob of butter and couple of fresh thyme sprigs and drizzle it with freshly squeezed lime juice.

Place the garlic cloves next to the fillet(s). Cover the dish with kitchen foil and put in the oven for 20 minute.

Whilst the fillet(s) are baking, chop up roughly the spring onion and mix it with the sour cream, season with black pepper.

Rest the fish for 5 minute after you’ve taken out from the oven. You should get crispy skin on the bottom and moist, juicy meat on top.

Serve it with the sour cream mixture.
