Omelette for Hungry Students

Just got home from work, and realised I have nothing in my fridge, which doesn’t happen too often. Luckily I always have some eggs on the shelf for this occasion. I had a couple of bacon stripes left over too, so I’d voted for omelette.

Cheap, quick and filling!

Student Omelette

 Ingredients

  • 30g Butter
  • 1 Onion
  • 2 Slice of Smoked Streaky Bacon
  • 1 White Capsicum
  • 3 Large Eggs
  • 2tbsp Sour Cream
  • Pinch of Thyme
  • Chives
  • Smoked Ground Paprika (of course Hungarian)

 

  • Preparation time: 5 minute
  • Cooking time: 10 minute
  • Serves: 1 hungry student

 

Melt the butter in a non-stick frying pan. Add the chopped onion and bacon. Fry them for 2-3 minute on high heat.  Slice up the white capsicum and add to the pan. Fry it for another 2-3 minute. Beat the eggs and the sour cream and season with black pepper and thyme. Turn down the heat to medium and poor the mixture in the pan.

If you don’t like it runny on the top use a lid to fry the omelette. But I like it a bit runny. Sprinkle with fresh chives and smoked ground paprika.

Serve it on bread slices with butter.
