Chicken Liver Pate with Port and Beetroot Jelly

Recently I went to London, and on the way home, I squeezed in a quick visit to Borough Market, where fresh meat, vegetables and other food and drink related commodities are in abundance.  As I was planning to make pate sometime, it was an obvious choice to take home some fresh chicken liver. It’s a bit messy, but very easy to make.

Pear and Amaretto Cheesecake with Dark Chocolate

I finally got around to make this cake again for my friend’s request. I made a couple of changes to the original recipe, which is by Gordon Ramsay. It has few stages to follow until completion, but nothing difficult or extravagant. Forget baking! This cake only needs a fridge and a 23-26cm springform cake tin. The flavour of the filling with the dark chocolate base is divine.
